My all-time favorite Christmas cookies! This recipe was passed down through generations and they are the yummiest!
2 cups flour
1/4 cup sugar
1/2 tsp baking powder
1/2 lb butter
1/2 lb cream cheese
Jam/preserves of your choice (I use raspberry)
Set oven to 375 degrees. Allow cream cheese and butter to soften; add sugar and cream until fluffy. Sift flour and baking powder together; then add to butter mixture. Form mixture into a ball, wrap in wax paper or plastic wrap and refrigerate overnight. Roll out onto a floured board and cut into 2-inch squares; (cookie shapes need to be able to fold over) Fill with your choice of flavored jam and fold over. (Do not fill cookies with too much jam, you could end up with a mess.. not good) Seal the cookies by pressing down on the edges. Place cookies on parchment paper lined cookie sheet and bake until lightly brown.
Dust with powdered sugar and ENJOY! 🖤
My fitness journey and my rosacea struggles have worked well together because I have given up the same food to get the best results with both. What food have I given up? Anything FUN! No more iced caramel lattes from Dunkin, 😒and certainly no more ice cream from Carvel. So to say my diet is extremely boring is an understatement, but cheat day?! Honey!! Those are the best. 😋
Heres what I no longer eat:
– Caffeine ( That’s right no more coffee unless its decaf, ill share my favorites with you!)
– Dairy( No ice cream, butter, milk, sour cream or yogurt.)
– Beef ( Bye Bye cheeseburger with bacon and fried onions ☹️)
– Citrus fruits
– Tomatoes ( No more homemade sauce on Sunday.)
– Eggplant (Throwing shade on those shade vegetables.)
– Soy sauce
– Spicy or hot food ( Back away from the tacos! 🌮)
– Seafood 🍤
These are my triggers, and I have tips on how to get creative and still love the food you eat!

*4 skinless boneless chicken breast cutlets ( Total about 1 pound) pounded to about a 1/4″ thickness
3/4 cup ground flaxseed
1/4 cup almond flour
*Oil ( I use avocado oil)
1/4 teaspoon of garlic powder
1/2 teaspoon parsley
1/8 teaspoon salt
Pinch of pepper
*I use organic food whenever possible, a little more pricey but worth it!
It’s okay if you don’t use organic but definitely try to.
Foil( Parchment paper makes the chicken gummy on the bottom)
Gallon size plastic bag
Meat tenderizer hammer
Set oven to 350 degrees. Combine the ground flaxseed, almond flour, garlic powder, parsley, salt, and pepper in the gallon size bag and set aside. Place the foil on the baking sheet and lightly oil. Place the chicken you have already pounded and place in the gallon size bag and shake until the chicken is completely coated, then place chicken on baking sheet. Repeat until all chicken is coated and placed on the baking sheet.
Bake for 15 to 20 mins. ( Every oven is different so keep an eye out for when the chicken is sizzling and the edges are browned.)
Rosacea. The skin condition that has changed my life because it affects the one part of my body that is never covered…. MY FACE! Most days wearing a paper bag over my head seems very appealing.. but NOPE! I will figure out my triggers and manage this condition that affects so many like myself.
I will share my tips with you and hopefully, it will help you be able to manage your condition or just become better educated on what millions of others go through every day.
